If you’re looking for an easy recipe that you can just throw in the crock pot/ slow cooker and let it do the work for you, then look no farther!
Total time 1 hour 10 minutes
Servings: 4
- 1 cup frozen corn (or 1 can)
- 2 tablespoons of sour cream
- ½ lb ground beef
- 1 can of tomato sauce
- Old el paso green chiles
- ¼ chopped onion (can substitute minced onion)
- 1 package of taco seasoning
- 1 can pinto beans
- 6 oz shredded cheddar cheese
- Chop fresh onion (or substance minced onion).
- Brown the ground beef with onion on medium-high. Drain meat with strainer.
- Add ground beef/ onion mixture to slow cooker and remaining ingredients to slow cooker. If too spicy, add sour cream in teaspoonfuls until the mixture is toned down to your liking.
- Cook on HIGH for 1 hour.
- Top with cheese. Serve with chips on the side.
Healthy Option
You can substitute the ground beef for ground turkey if you are needing a healthier option. Also, shredded chicken breast goes great with this recipe.
