If you’re looking for an easy recipe that you can just throw in the crock pot/ slow cooker and let it do the work for you, then look no farther!

 

Total time 1 hour 10 minutes

Servings: 4

  • 1 cup frozen corn (or 1 can)
  • 2 tablespoons of sour cream
  • ½ lb ground beef
  • 1 can of tomato sauce
  • Old el paso green chiles
  • ¼ chopped onion (can substitute minced onion)
  • 1 package of taco seasoning
  • 1 can pinto beans
  • 6 oz shredded cheddar cheese

  1. Chop fresh onion (or substance minced onion).
  2. Brown the ground beef with onion on medium-high. Drain meat with strainer.
  3. Add ground beef/ onion mixture to slow cooker and remaining ingredients to slow cooker. If too spicy, add sour cream in teaspoonfuls until the mixture is toned down to your liking.
  4. Cook on HIGH for 1 hour.
  5. Top with cheese. Serve with chips on the side.

Healthy Option

You can substitute the ground beef for ground turkey if you are needing a healthier option. Also, shredded chicken breast goes great with this recipe.
