I recently heard about this thing called Taco Spaghetti! A coworker was talking about it and my jaw literally dropped… How genius is this to mix pasta and Mexican food together, my two favorites?! I HAD to try it…
When I googled taco spaghetti recipes, it mainly showed casseroles that looked delicious but were not what I had in mind. I was looking for a quick dinner since I didn’t have much time to cook after work. I decided to cook it similar to how I cook actual spaghetti, except with a Mexican flair.
So, I discovered this easy recipe below just the other evening with a little trial and error. My husband does not like spaghetti so he was super skeptical. Garrett tried it and loved it though! It really doesn’t take like spaghetti at all.
The measurements for the recipe below are for 2 people since I just cook for my husband and me right now. Of course, you can double it for 4 people, triple it for 6 people, etc. I left out beans and corn but more power to you if you want to add that or something else.
Taco Spaghetti
4 Servings Time: 15 min
Ingredients:
½ lb ground beef
1 tablespoon of seasoned salt (or salt & pepper)
1/2 package of taco seasoning
1 small can of green chili peppers (or half a can of Rotel)
2 tablespoons of cheddar shredded cheese
1 tablespoon of sour cream
½ package of angel hair or spaghetti noodles
Directions:
- Get the water boiling for the noodles and follow the package instructions. It only took me 6 min to cook mine.
- While the noodles are cooking, add some oil to a skillet and brown the ground beef. Add the seasoned salt or salt and pepper to your preference. (Takes about 5 min on medium-high heat to cook.)
- Drain the meat. Add taco seasoning and follow package instructions to cook. Turn heat on Low and add sour cream and chili peppers (or Rotel). If you don’t want it spicy, sub the chili peppers for regular diced tomatoes and/or use more sour cream to taste.
- Take the noodles off heat and put on warm.
- Serve the meat mixture over the bed of noodles. Garnish with cheese, onions, sour cream and/or anything else of your choice.

When I had sons at home, I cooked lots of chili spaghetti. Just make spaghetti and add brick chili. Serve over chips with cheese on top. Delicious. Some called it spaghetti-red.
