Have you heard of the DD dilemma? Yeah me either, I just made it up. This DD dilemma that I speak of is what I call the “Daily Dinner dilemma” and I just want to take a moment to rant.

As working women, we work our brains off and get in the car to drive home only to realize we have no clue what we are having for dinner and are too tired to even care. I’m so tired mentally when I get home. I haven’t physically exerted myself at all but mentally I’ve had it (I have a desk job). Speaking of physical exertion, I really need to start exercising more. Anyways, then there’s laundry and dishes to be done but all I want to do is veg out and binge watch feel good TV shows on Netflix.

So how do you mom’s and ladies out there do it? How can you work and take care of everything at the same time? It’s like having 2 full time jobs. I never realized why my mom and grandma constantly talked about random things until now. Women’s thoughts are everywhere and they have to be to get things done.

Can anyone else relate to the DD dilemma? Seriously the struggle is real and I don’t even have kids yet. My heart goes out to all the working women and mom’s out there who work their tails off (this includes full time mommas). God bless all of you!

My point is sometimes (more often than I care to admit) I resort to drive through junk food. It’s cheap, easy, and quick of course. Sometimes we go to dinner somewhere a little nicer but it costs a lot more than making your own food. So here’s my solution to what I am now calling the DD dilemma: slow Cooker recipes. Slow Cooker recipes that I can leave in while I’m at work forever are awesome! It’s so nice to just throw everything in and let it do the work for you. Which brings me to the next subject- the slow cooker recipe for you hard working mommas! 

I’m done ranting (you’re welcome). I found this on allrecipes.com but modified it to what I had in the kitchen (I didn’t have celery, shrimp, carrots, or bell peppers). Below is my modified version.

Slow Cooker Jambalaya

12 servings

Ingredients:

  • 1 lb andouille sausage
  • 1 can chicken breast
  • 1 yellow onion
  • 1 can diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon oregano
  • 1 tablespoon Cajun seasoning
  • 2 cups rice
  • 2 cups chicken broth

Directions:

1. Cut the onion into cubes.

2. Combine everything, except the rice, in the slow cooker and put on low for 8 hours or high for 3-4 hours. I use a slow cooker liner so I put this down first. 

3. Add uncooked rice in the last 30 minutes. Or if you’re afraid it won’t cook like I was, cook the rice and then add it.

4. Serve
