Time: 15 Minutes
Ingredients: 6 servings
- 1 stick unsalted butter
- 3/4 cup half and half
- 1 teaspoon lemon juice
- 2 teaspoons Dijon mustard
- 1 cup of shredded parmesan cheese
- ½ pound fettuccine noodles or angel noodles
- Teaspoon creole or cajun seasoning
- 12 oz of frozen cooked shrimp (I prefer deviled, peeled, and tail removed)
- 1 teaspoon Coconut oil or extra virgin olive oil
Directions:
- Cook and drain the pasta. (Follow package directions for cooking; typically 10 minutes)
- Sauce mixture: combine butter, half and half, lemon juice, and dijon mustard over medium heat. Heat it up until you get to simmer then add the cheese and stir. (5 minutes)
- Saute the shrimp in coconut or olive oil with a dash of creole or cajun seasoning on medium heat. (5 minutes)
- Then add the sauce and meat to the pasta over warm and add 1 teaspoon of salt and some pepper.
- Serve with garlic bread or side salad. Will serve 4 people or in my case, my husband and I had leftovers for one other meal.
