Time: 15 Minutes

Ingredients: 6 servings                 

  • 1 stick unsalted butter
  • 3/4 cup half and half
  • 1 teaspoon lemon juice
  • 2 teaspoons Dijon mustard
  • 1 cup of shredded parmesan cheese
  • ½ pound fettuccine noodles or angel noodles
  • Teaspoon creole or cajun seasoning
  • 12 oz of frozen cooked shrimp (I prefer deviled, peeled, and tail removed)
  • 1 teaspoon Coconut oil or extra virgin olive oil

Directions:

  1. Cook and drain the pasta. (Follow package directions for cooking; typically 10 minutes)
  2. Sauce mixture: combine butter, half and half, lemon juice, and dijon mustard over medium heat. Heat it up until you get to simmer then add the cheese and stir. (5 minutes)
  3. Saute the shrimp in coconut or olive oil with a dash of creole or cajun seasoning on medium heat. (5 minutes)
  4. Then add the sauce and meat to the pasta over warm and add 1 teaspoon of salt and some pepper.
  5. Serve with garlic bread or side salad. Will serve 4 people or in my case, my husband and I had leftovers for one other meal.
